Abstract:
The prevalance of malnutrition among children in ethiopia is very high.To reduce the prevalence of malnutriton,one of the possibile remendies could be to search for under utilized food sources with high protein and energy contents.The aim of tthis study was to investgete the nutrent composition of amaranth gains cultivated in southwestern Ethiopia.Fivr different samples of amaranth gainsnwere collected randomly from open markets in Goldiya, Maji and Yeki ,southwest Ethiopia in Jan 1997 and evaluated for thir poximatre compositon ,minirals contents, Iysin contein and protin fractions ,available carbohdrstes and crude fat charactristics using standard methods.
